Our craft

We do our own baking. That sounds like a small thing and has quietly become a large one: everything that sits in the baskets of our five shops in the morning is made in our bakery on Ritterfelddamm and our bakehouse in Gatow.

The day starts early

For the first rolls to be in the basket at half past six, the bakehouse has been awake a long while. What needs time gets time: doughs prove overnight, sourdough is kept going, loaves go into the oven by hand. “We bake fresh every day” has been on our chalkboard for as long as there has been a chalkboard.

Two bakehouses, five shops

Our bakery is on Ritterfelddamm; the second bakehouse is on Wilhelmstraße in Gatow. From there it goes out each morning to the shops in Kladow, Gatow, Spandau and Westend. Short distances — which is why we are a Landbäckerei, a country bakery, and not a bread factory.

Bread of the Week

A different bread goes up on the chalkboard in the shop every week. Sometimes it is the Landbrot, sometimes Das Urige, sometimes something that only makes sense for a few days a year. It is our way of working through the whole range — and the best chance to try something you would otherwise have walked past.

On the edge of the city

Kladow sits at the western end of Berlin, on the Havel, where the city gives way to fields. For a bakery that is a good place to be: near enough to deliver every morning, far enough out not to be rushed.

“What counts is the quality of the baking.”
